Peruvian Ceviche

Ceviche! We’ve sampled Ceviche all over Central and South America and nothing measures up to the Peruvian recipe.

Known as a National dish here in Peru, it involves immersing delicate raw fish (Sea Bass or Halibut) in aromatic citrus juices (lime), to slowly “cook” or marinate the tender chunks of fish. Small red chilies or ‘aji Limo’, thinly sliced raw red onion and a touch of garlic add a spicy irresistible kick to the dish! The strong flavors are balanced out by a mixture of sweet potatoes and corn a leaf of butter lettuce. You gotta try this stuff!
